Oven Roasted Vegetables

A roasted vegetable medley including zucchini, eggplant, carrots, sweet potatoes, and red onions, garnished with chopped herbs.

Ingredients

  • 2 zucchinis

  • 3-4 large carrots

  • 1/2 head of cauliflower

  • 1 red onion

  • 1-2 tablespoons oil

  • 1/2 tablespoon Italian seasoning

  • 1 teaspoon garlic powder

  • Salt to taste

  • Pepper to taste

Instructions

  1. Start by preheating the oven to 425 degrees.

  2. Then chop all the vegetables into small pieces.

  3. Once all the vegetables were cooked, add them to a large sheet pan and drizzle oil over them.

  4. Add the seasoning to the veggies and mix.

  5. Once the oven is preheated, add the veggies and cook for 25-30 minutes, or until the veggies are soft with a small bite.

  6. Once cooked, serve and enjoy.
