Ham Fried Rice
This Ham Fried Rice is one of my favorite meals that my mother used to make for me. It is perfect to just have on its own or to have with orange chicken or other Asain dishes.

Ingredients
2 Cups leftover rice
2 tablespoons oil
3 eggs
1 Cooked smoked bone-in ham steak
1/2 Package frozen peas and carrots
3 bundles of green onions
Salt to taste
Pepper to taste
Soy sauce to taste
Instructions
If you don’t have leftover rice, either make the rice the day before and leave it in the fridge overnight. Or make the rice, spread it out on a baking sheet, and put it in a dry place for 3-4 hours.
Dice the ham into small cubes. Cut the green onion
In a large frying pan, warm the oil. Add the eggs and scramble.
Once the eggs are scrambled, add the ham, frozen peas and carrots, and the green onion. Fry for about 8 minutes. Or unto the onions are cooked down a bit and the ham has started to brown.
Add salt, pepper, and soy sauce to taste.
Let the rice cook for another 7-10 minutes, mixing occasionally.
