Gingerbread Cookies

These gingerbread cookies are one of my favorite things to make during the holidays. It is a really easy recipe and makes a lot of cookies.

Ingredients

Cookie Dough

  • 3 1/2 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 tablespoon ground ginger

  • 1 tablespoon cinnamon

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon ground cloves

  • 10 tablespoon butter

  • 3/4 cups brown sugar

  • 2/3 cups molasses

  • 1 egg

  • 1 teaspoon vanilla

Frosting

  • 1 cup powdered sugar

  • 1 tablespoon milk

  • 2 teaspoons corn starch

  • 1/4 teaspoon vanilla

Instructions

Cookie Dough

  1. In a large bowl mix the sugar and butter until it looks and feels like wet sand.

  2. Add the egg, molasses, and vanilla to the sugar mixture.

  3. In a separate large bowl add the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves. Mix until combined.

  4. Slowly add the flour to the wet ingredients until the dough comes together.

  5. Pour the dough out into plastic wrap, wrap well, and refrigerate for 1-3 hours.

  6. Preheat the oven to 350 degrees.

  7. After the dough is chilled, cut it into fourths and roll out the dough until it’s about 1/2 inch thick. Then cut out the cookies.

  8. Put cookies onto a baking sheet and bake for about 9-11 minutes.

  9. Once cooked let cookies cool.

  10. After the cookies are cooled you can now frost them.

Frosting

  1. Add the powdered sugar, milk, corn starch, and vanilla into a bowl and mix until the desired consistency is reached. (May need to add more sugar or milk).

  2. Add food coloring until you reach your desired color.
