Elote- Mexican Street Corn
Elote is Mexican style street corn. The perfect side dish for having tacos, tosadas’s, and great to bring to a party. It is a little sweet, spicy, and creamy.

Ingredients
6 ears of corn ( or 1 package of frozen corn on the cob)
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon sriracha ( if that’s too spicy, add 1/2 Tbsp)
2 tablespoons lime juice
1/4 cup chicken broth or stock
Salt to taste
Pepper to taste
3/4 cup cotija cheese ( make sure to break it into little chunks)
2 tablespoons cilantro
Ground chili powder to taste
Instructions
On the grill over medium heat, roast the corn until it is slightly charred. Char is for about 10 minutes in total, with 5 minutes on each side. Do not roast it too much, or it will have a burnt flavor
While the corn is on the grill, in a small bowl, mix mayo, sour cream, sriracha, lime juice, chicken stock, salt, and pepper. Mix well and set aside for later use.
After the corn is charred, cut it off the cob and add it to a large skillet, and add the mayo mixture, as well. Cook over medium heat till the corn is warm. (about 10 minutes)
Once corn is warmed, pour it into a large serving bowl and add cilantro, cotija cheese, and chili powder.
Serve and enjoy.
